Deserts

· Ital Banana Bread

4 oz (115g) vegetable margarine
3 large ripe bananas
2 tbs honey
8 oz (225g) wholemeal flour
2 tsp baking powder
1/2 tsp freshly grated nutmeg
4-5 drops vanilla essence
2 oz (55g) crushed cashew nut

Method: Cream margarine and honey until soft. Peel the bananas and cut 9 diagonal slices from one of the bananas and reserve. Mash the remaining bananas in bowl and beat this puree into the margarine and honey. Sift the wholemeal and baking powder and fold into the mixture. Add the freshly grated nutmeg, the vanilla essence and finally stir in the raisins and chopped cashew nuts. Grease an 8-inch (20 cm) square cake. Spoon in the mixture and spread evenly. Using the point of a knife lightly mark the surface of the cake into 9 equal squares. Centre a slice of banana in each square. Bake in a preheated oven at 350F (180C) for 35-40 minutes. Cool and slice into 9 square pieces. Enjoy!

· Vegan Cornbread

2 Tbsp ground flax seeds
6 Tbsp filtered water
1 cup wholemeal splelt or wheat flour
1 cup wholemeal cornflour
1/4 whole unbleached sugar or agave syrup
4 tsp baking powder
3/4 tsp sea salt
1 cup soy, hemp or rice milk
1/4 canola or hemp oil

Method: Preheat oven to 425F. Grease a glass baking dish with vegetable margarine. Bring the water to a boil in a small saucepan. Add the ground flax seeds, reduce the heat to medium-low, and simmer the seeds for 3 minutes or until thickened. Stir occasionally. Set aside. In a medium bowl, whisk together the flour, cornmeal, sugar or agave, baking powder, and sea salt until well-combined. Add the ground flax seed mixture, milk, and canola or hemp oil to the flour mixture. Beat until smooth (do not overbeat.) Turn the mixture into the prepared baking pan. Bake for 20-25 minutes, or until a toothpick inserted in the middles comes out clean. Cool on a wire rack for 10 minutes; invert cornbread onto the wire rack, then turn right side up and continue to cool until warm, about 10 minutes longer. Done!
